Vegetable Side Salad
Ingedients:
- 1 med onion, sliced into thin wedges
- 1 tbs butter
- 1 tbs olive oil
- 6 green onions, cut into 1-inch pieces
- 3 tbs hosin sauce
- 1 tsp paprika
- 1 15-oz can corn, drained
- 1 15-oz can black beans, rinsed and drained
- 3/4 cup celery, chopped
- 1/2 cup red pepper, finely chopped
Cook onions in butter and olive oil until tender, do not brown. Add green onions, hosin sauce and paprika. Cook 1 minute. Add the rest and stir till warmed.
Makes a great side of vegetables. Found it on a note card in a cookbook.
